      为分析和评价印尼拟松鲷(Datnioides Pulcher)的营养价值,采用常规方法检测印尼拟松鲷肌肉的营养成分,并与同科经济鱼类和常见的优质淡水鱼类进行比较。结果表明:印尼拟松鲷肌肉中的水份、粗蛋白质、粗脂肪和粗灰分分别为:65.6%、19.6%、7.6%、和1.3%;在肌肉(干样)中共测得16种氨基酸,总含量为干质量的18.4%,其中包含7种人体必需氨基酸(EAA),占氨基酸总量(TAA)的36.09%;必需氨基酸指数(EAAI)为79.46%,符合FAO/WHO 所规定的人体必需氨基酸的均衡模式;限制性氨基酸为Met 和Val;特征性鲜味氨基酸(FAA)含量为42.15%;不饱和脂肪酸共16 种,总量为68.41%,其中油酸和亚油酸分别为23.99%和10.56%,并且含有丰富的DHA 和鱼油中相对缺乏的DPA,含量分别为8.5%和5.1%。综合分析,印尼拟松鲷氨基酸含量均衡丰富,不饱和脂肪酸和多不饱和脂肪酸含量高,是集较高观赏价值和与食用价值于一身的可开发鱼类品种。

      In order to analysis and make a scientific evaluation for the nutritional value of Datnioides Pulcher, the common nutrient components, amino acid composition and acid composition in muscle of D. Pulcher were determined based on conventional nutritional components analysis. Then the comparison was made between the fish and some economic fishes coming from the same family and other freshwater fishes with common quality. The results showed that the content of moisture, crude protein, crude fat and crude ash in the fish fresh muscle of D. Pulcher was 65.6%, 19.6%, 7.6% and 1.3% , respectively. Sixteen kinds of amino acids of D. Pulcher were found in dry muscle, 7 out of which were essential amino acids (EAA). In dry muscle, the content of total amino acids (TAA) was 18.72%, the content EAA was 6.81%, and the ratio of EAA to TAA was 36.09%. The essential amino acid index (EAAI) was 79.46%, meeting the high-quality protein standard guided by the Food and Agriculture Organization and Word Health Organization (FAO/WHO). According to the amino acids score(AAS) and chemical score (CS), the first and second limited amino acid were Val and Met, respectively, and the essential amino acids index (EAAI) of D. Pulcher was 79.46. The content of flavor amino acids (FAA) was 42.15%. There were 16 kinds of unsaturated fatty acids(UFA), ccounting for 68.41% of dry muscle, among of which, oleic acid and linoleic acid, with richness in DHA and DPA, were 28.18% and 17.09%, respectively, and the content of DHA and DPA (relatively lack in fish oil), were 8.5% and 5.1%, respectively. The comprehensive analysis shows that the contents of amino acids and high-unsaturated fatty acids in muscle of D. Pulcher are higher, and the composition of amino acids is reasonable, thus, D. Pulcher is a high quality fish with high ornamental value as well as edible value which has good prospects for exploitation and utilization.
