      为了解玉筋鱼(Ammodytes personatus)的营养价值,系统分析了3种不同规格玉筋鱼的基本营养成分、氨基酸组成、脂肪酸组成和无机元素组成。结果显示,湿基样品规格越小,其水分、灰分含量越高,粗脂肪含量越低。17种被检出的水解氨基酸中含量最高的4种氨基酸分别为Glu、Asp、Lys和Leu,并且规格越小,水解氨基酸含量、必需氨基酸含量越高;根据氨基酸评分和化学评分可知,玉筋鱼的第一限制性氨基酸均为芳香族氨基酸(Phe+Tyr),第二限制性氨基酸分别为缬氨酸和含硫氨基酸(Met+Cys);其必需氨基酸指数分别为82.66、78.29和77.93;脂肪酸含量的测定结果表明,3种样品均单不饱和脂肪酸(MUFA)>饱和脂肪酸(SFA)>多不饱和脂肪酸(PUFA),并且规格越大EPA占PUFA的比例越高,DHA占PUFA的比例越低;玉筋鱼富含人体所需的多种无机元素,常量元素中Na、K元素含量最高,微量元素中Fe、Zn的含量最高。研究表明,玉筋鱼是一种营养价值较高、味道鲜美的优质鱼类。

      In order to understand the nutritional value of three different sizes Ammodytes personatus,the basic nutrients composition, amino acid composition, fatty acid composition and inorganic element composition were systematically analyzed. The results showed that the smaller weight of the wet Ammodytes personatus, the higher content of water and ash, and the lower content of crude fat. Glu, Asp, Lys and Leu were the highest contents among the 17 kinds of alternative amino acids in the Ammodytes personatus. The smaller the sample weight was, the higher the total amount of hydrolyzed amino acids and the content of essential amino acids were. According to nutrition evaluation in amino acid score(AAS)and chemical score(CS), the first restrictive amino acids were aromatic amino acids (Phe+Tyr), and the second restrictive amino acids were Val and sulfur-containing amino acids (Met+Cys); the essential amino acid indexes (EAAI)were 82.66, 78.29 and 77.93, respectively,indicated that the smaller of the Ammodytes personatus, the more reasonable for its protein composition and dad the higher protein utilization rate. In terms of fatty acid composition, the content of monounsaturated fatty acid (MUFA)> the content of saturated fatty acid (SFA)> the content of polyunsaturated fatty acid (PUFA) in all three samples; and the higher the proportion of EPA in PUFA, the lower the proportion of DHA in PUFA in Maximum weight sample. Ammodytes personatus was rich in a variety of Inorganic elements needed by human body, the contents of Na and K elements were the highest among the major elements, and the contents of Fe and Zn were the highest among the trace elements. Studies had shown that Ammodytes personatus was a high-quality fish with high nutritional value and delicious taste.
